Great day today…2 soccer games and the weather couldn’t have been more perfect. I ran on my treadmill – a 5K – why would I do that on a beautiful day? It ended up being just me & my 9 year old. When I weighed my options – either run while she rides her bike, which is NOT very relaxing for either of us – or, let her play PS3 Singing Game while I jump on for :26…pretty easy to make that decision. Plus, when I was finished, we BOTH jumped on our bikes & had a nice ride. We topped it off with a visit to the park.
I just ate one of my absolutely FAVORITE things – first, I should say that after my dad died when I was 8, we became pretty darn poor…I won’t get into all that, but suffice it to say that my life became quite different – alcoholic mom, very little money, lots of nights going to bed hungry. I knew we were poor; I felt it. But every once in awhile, my mom would cook potatoes in a way that she told me my dad used to love – “Cottage Fries” – just cut up, cold baked potatoes, thrown into a skillet with a little olive oil, a pat of butter, and lots of salt & pepper. The potatoes crisp up on the outside & are an Irish girl’s dream, I tell you! Right at the end, cut up several green onions (scallions), a little ketchup, and look out! This is so delicious! I have never made this potato dish without thinking of my sweet mom in Heaven.
